Known to boost immunity and maintain healthy digestion, fermented foods are rich in probiotics and do a lot more for us than just taste good. In this spirit, we present an array of locally fermented foods that includes pickled vegetables, kombucha, and yogurt.

Who's behind these foods? Flying Cow Dairyproduces high-quality dairy products on their family farm in Oregon City. As fifth generation farmers, the Taylor family raises a herd of Normande, Montbileire, Jersey, Sweetish Red, Milking Shorthorn, and Friesian cows that graze on 118 acres of grass-rich pastures. All of the dairy's cows are fed a diet of GMO-free grass, alfalfa, and fodder, yielding a milk which is low-temp vat pasteurized, non-homoginized, and delivered in glass bottles.
Oregon Brineworkswas borne by an Oregon couple, Brian and Connie Shaw, that met while running an organic farm. As a family-run, natural fermentation company specializing in handcrafted vegetable processing, they preserve fresh produce sourced from both their own farm in addition to other organic family farms in the Northwest. Their natural fermenting process yields a nutrient dense, living food teeming with probiotics.
Lion Heart Kombucha was founded by Amanda & Jared Englund with the intention of providing custom blend kombuchas that promote resiliency and balance. Their kombucha is fermented “dry” so there is very little residual sugar, making for a healthier brew. They use Certified Organic ingredients, which are sourced directly from local farms, in combination with environmentally conscious brewing practices.
