Appearing a bit like a small parsnip, Parsley Root has long been popular in Europe where it has boiled and bubbled away in soups and stews for hundreds of years. Also known as Turnip-Rooted Parsley, it has a pungent, earthy taste with a complex flavor and rich texture. There are so many ways to use parsley root but I enjoy adding it to a soup, roast or mashed potatoes. Narendra likes eating it raw!
Cha-Cha or NutterButter Winter Squash We've added a small winter squash to each share. These squash were dry farmed alongside corn and beans this past year. Part of their small size is due to the lack of irrigation over their whole season. Though pint-sized these squash pack great flavor and are great to add to any winter dish! We've been quite busy this week running around enjoying this warm, dry weather and getting all prepped for Spring which now feels like it is already here! Until next time, Jen |
