- Mix together 1/2 cup hazelnuts, 1/2 cup breadcrumbs, finely chopped herbs (thyme, rosemary, oregano, scallions), salt and pepper
- Cut salmon fillets in half, remove skin if desired
- Dredge in flour, egg, and then hazelnut mixture
- Pan sear in oil skin side up (if still on) for 3-4 minutes each side
- Finish in 375 degree oven until desired doneness (about 5 minutes for medium)
