As is the theme with our Spring CSA, you get lots of green this week! The beet greens are a lovely three color beet variety and as a special treat you may get a small bonus beet. Very similar to chard, the beet greens can also be used in place of spinach. Great sautéed, especially with some of the green garlic...yummmm. I also like to just put the green garlic raw in a salad along with fresh strawberries.
