Aioli

• 4 garlic cloves, peeled
• 2 egg yolks
• 3/4 cup extra virgin olive oil
• coarse salt

Mash garlic with some salt in a mortar and pestle or with the back of a broad knife. Mix yolks with salt in blender until foamy, then carefully drizzle in the olive oil until the mixture thickens. Add the garlic paste and blend a few seconds more. Makes 1 cup.
