A few notes for this week: Chicories Each share has one of two varieties...either Cornet de Bordeaux Escarole or Bellesque Frisee. Similar to lettuce, both are great in salads, roasted or blanched. During the cold winter months the bitter flavor of these greens is tempered but with all the warm weather they do lend to the bitter side. If you want to sweeten them up a good trick is to soak them in ice water for 10-30 minutes. I love them with a simple vinagrette. Josh wrote a great article about how to use chicories here. Pink Beauty Radishes These gorgeous radishes are a little on the big side but absolutely delicious. They may not store well so eat them while they are fresh! Great in a sald, with hummus or my favorite...on a piece of toast with butter and salt! Until next week, Jen |
